El Acapulco doesn't offer a lot of vegan options, but there are a couple of good ones, and it's worth going for the awesome salsa and guac. Random tip: the salsa at the Polaris location is better (IMHO) than the salsa at the Worthington location (the latter has a kind of smokey taste). The Polaris salsa is so good I sometimes take a small tupperware container and ask for some salsa to go. They usually charge me about $3 for this.

Vegan meals available:

  • Bean tostadas - ask for no cheese, but specify that you don't want them to leave off the guac. I think they assume you're on a diet if you ask for no cheese, so they hold the guac too. Sad. - $3.50
  • Vegetarian Fajitas - zucchini, peppers, onions, tomatoes, rice, beans, and tortillas. Make sure to specify no butter in the rice (see below)

Individual ingredients:

  • The beans are vegan
  • The guac is vegan
  • The tortillas (which they don't make, they order premade but they were nice enough to show me an ingredients list) are vegan except for a minute amount of sugar (very last ingredient)
  • The rice is usually cooked with butter but can be cooked with vegetable oil instead upon request.
