Aside from being able to make soy lattés and such upon request, Paneras typically also keep a binder under the counter with ingredient lists for every single thing they serve. Their bagels are vegan except for the ones containing cheese or chocolate or special flavors, and they will bring you a little container of olive oil as a substitute for butter if you ask.

If you want a fancy bagel, the Dutch apple bagel is vegan, as are the obvious sesame,  garlic, and "everything" bagels.

I don't have personal experience with this bakery but it's come up on several searches for 'vegan wedding cake Columbus' and is listed on the about.com vegan wedding cake page as well as reviewed by others. According to one review:

This restaurant is cozy, fun, casual, and very vegan-friendly. The vegan items on the menu and in the dessert case are clearly marked. The art hanging on the walls changes all the time and I think it's usually for sale. There's a huge adorable/creepy mural of lots of happy animals above the front counter. 

They lost points though, for telling me the croissants were vegan, which is not actually true. (Tragic! I know!)
